Instructions:

  1. In a medium saucepan, heat the broth over low heat and keep it warm.
  2. In a large, deep skillet or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened and translucent.
  3. Add the sliced mushrooms to the skillet and cook until they release their moisture and start to brown.

  7. Once the rice is cooked, remove the skillet from the heat. Stir in the grated Parmesan cheese and butter until melted and well combined. Season with salt and pepper to taste.
  8. Cover the skillet and let the risotto rest for a few minutes to allow the flavors to meld together.
